Job Description



We are seeking a talented and passionate Teppan-yaki Junior Sous Chef to join our esteemed culinary team in Tokyo, Japan. As a key member of our kitchen staff, you will assist in creating unforgettable dining experiences for our guests through your expertise in teppanyaki-style cooking and leadership skills.

  • Assist the Head Chef and Sous Chef in overseeing daily kitchen operations, focusing on the teppanyaki station
  • Prepare and cook a variety of dishes using teppanyaki techniques, ensuring high-quality presentation and taste
  • Maintain cleanliness and organization of the teppanyaki cooking area
  • Train and mentor junior chefs in teppanyaki cooking methods and techniques
  • Collaborate with the culinary team to develop new menu items and seasonal specials
  • Ensure compliance with food safety and sanitation standards
  • Assist in inventory management and ordering of ingredients
  • Participate in menu planning and cost control measures
  • Provide excellent customer service by interacting with guests during teppanyaki performances

Qualifications

  • Culinary degree or diploma from a recognized institution
  • Minimum 3-5 years of experience in teppanyaki cooking, preferably in a high-end restaurant or luxury hotel setting
  • Strong knife skills and proficiency in teppanyaki cooking techniques
  • In-depth knowledge of Japanese cuisine, ingredients, and culinary traditions
  • Current food safety and sanitation certification (e.g., ServSafe)
  • Excellent communication and teamwork skills
  • Ability to work efficiently in a fast-paced environment
  • Physical stamina to stand for extended periods and work in a hot kitchen
  • Strong leadership and mentoring abilities
  • Fluency in English; Japanese language skills are highly desirable
  • Work permission is Japan is necessary
  • Previous experience as a sous chef or in a leadership role is preferred
  • Passion for culinary innovation and commitment to delivering exceptional dining experiences
